Chablis 1er Cru ‘Vaillons’, William Fevre – Located on the Côte des Vaillons, this appellation has 8 distinct lieux dits. With a soil base more limestone than clay, sitting on hard, compact Portlandian limestone, it represents all the different types of Chablis terroir under one appellation. Pronounced nose of citrus fruit and flowers, with lovely freshness and a few mineral touches. Generous palate, with lovely roundness.
The Chablis is currently replaced with Billaud-Simon Chablis (£26.99), reflected in the gift price.
Sancerre, Domaine du Pré Semelé – This family run winery is in a small Hamlet called Maimbray which lies to the North of the village of Sancerre. The nose offers attractive notes of gooseberries, elderflower and citrus. The palate has a streak of minerality with pinpoint acidity and generous mouthfeel.
